The name Persillé de Rambouillet comes from its "parsley-veined" interior and the Rambouillet forest. The cheese is produced using traditional farmhouse methods, with the curd sliced and mixed by hand, then molded and turned in cellars. The wheels are then covered in vegetable ash for protection, to help with rind formation, support the ripening process and make them more attractive. Afterall, we all want to enjoy an attractive cheese!
This cheese changed my mind about blue cheese. Years ago I was under the impression that I didn’t care for blue cheese. Its perfect balance of sweet goaty tang and earthy blue made me want to explore the vast world of blue cheese.
Monger’s Tip: Enjoy on toasted walnut bread with fresh cherries and honey. Or if you're feeling like something sweet it's amazing on a graham cracker with dark chocolate.
