The latest wheel of Ciel de Chèvre has arrived. This raw goat’s milk cheese has a supple meatiness, tang and the right amount of tack.
Ciel de Chèvre is a trappist cheese, also known as monastic or monk cheese. These types of cheeses can be found in cultures where monks live or did live at one time. The cheese is traditionally produced by monasteries to nourish the monks and to be sold as a source of income. Trappist cheese is yale yellow with small holes called eyes. Although now most trappist style cheeses are no longer produced in monasteries, we still love devouring this versatile style of cheese.
Monger’s Tip: Ciel de Chèvre is perfect for a cheese plate. It’s not overly pungent, it's a good beginner's goat cheese and the texture reminds me of American cheese. I love it spread on an everything bagel, with persian cucumbers and maldon.
