Foxglove is washed in a culture made of beer, yeast, salt and other secret ingredients the cheese markers call the “Magic Potion”.  Foxglove was inspired by great stinky cheeses like Epoissess and Talegio. It's supposed to be stinky! That’s part of the delicacy. The slightly pungent exterior makes the sweet cream finish just that much more enjoyable. Trust us, you’ll go back for more!

Monger’s Tip: Try Foxglove spread over toasted rye bread and throw in a few slices of saucisson sec and pair with a dark beer. And if you prefer wine to beer this cheese also pairs well with an off dry riesling. 

A note on handling and storage - In case you don’t finish this gooey delight in one sitting :)

Each individual cheese is wrapped in special paper that allows them to "breathe." Please oh please do not store in a ziplock or plastic bag! This can actually make the cheese start to stink worse, as they are still living and need oxygen.   

 A better option (in order to contain their smell) would be to store them in a "Tupperware-style" container that is larger than the cheese giving them a little "breathing room."  If you choose this option, make sure you open the container every few days (a tip from the makers themselves).
