Meet our newest favorite cheese, Marbré de Chèvre! This unique cheese is a kind of take on the traditional Morbier cheese, which features a line of ash running through the center of the paste. Marbré de Chevrè takes this feature to the next level with ash marbled throughout the entire 13 pound wheel. Another unique aspect of this cheese is that it’s made with goat’s milk (Morbier is always made with cow’s milk). Goat’s milk shows up as a beautiful ivory white color when made into cheese and the contrast of the blue marble ash to the white paste creates living art!
It’s aged around 3 months by renowned affineur company Pascal Beillevaire, who focuses on aging and distributing a wide variety of French cheeses. They do a remarkable job developing Marbré and its protective rind, which gives it a very cool geode effect. A wedge of this cheese is just as appealing to the eyes as it is on the palate. There’s a lot of beauty in this bite to back up the allure. Its semi-firm texture has very low moisture but borders on firm fudge, coating the entire mouth with a myriad of earthy flavors, a gentle lactic sweetness and a whisper of minerality.
