Adopt-an-Alp : Berner Hobelkäse
Adopt-an-Alp is an engaging program that supports small Swiss cheesemakers, often traditional, family-owned farms nestled high in the Swiss Alps. By "adopting" an alp, cheese shops, retailers, or individuals can help sustain these artisanal practices, ensuring that mountain cheesemaking traditions endure and that farmers receive fair compensation for their work and craft.
This program allows participants to receive cheeses from specific alps throughout the year, including specialties like Alpkäse and other unique, seasonal alpine cheeses that differ based on the meadow's flora and the animals' natural diet. As cheesemongers we are excited to be part of this program because it offers a distinct and personal story to share with our customers. Not to mention, amazing cheese! It also reinforces the importance of preserving traditional cheesemaking in some of the most beautiful and rugged regions in the world. We’re hopeless romantics, after all.

Name of Cheese: Berner Hobelkäse
Type of Cheese: Swiss / Alpine
Country of Origin: Switzerland
Milk Type: Raw, Cow
Vegetarian: No
Our first Adopt-An-Alp wheel to arrive is the Berner Hobelkäse. And what a fantastic choice! Made of raw cow’s milk, this is such a special cheese. Each wheel is traditionally aged for at least two years to develop its signature crumbly texture and deep, caramelized flavor. It’s often enjoyed shaved thinly to bring out its delicate, complex notes.
Monger’s Tips:
Shaving and Tasting: Try shaving off thin curls and tasting it at room temperature. This way, you’ll experience its full flavor profile—nutty, a little sweet, and maybe even with a touch of herbaceousness from the alpine pastures.
In the Kitchen: Hobelkäse can work as a unique topping for dishes. Try it over a warm dish like roasted vegetables, where the shavings will melt slightly, enhancing its rich texture.
